Easy Crockpot Applesauce


My son seems to have a love/hate relationship with apples.  For weeks, it appears as though he has one permanently affixed to one hand.  Then one day I open the crisper to find a whole bagful languishing in refrigerated obscurity.  That's when I get out the crock-pot.  
If you've never had homemade applesauce, you are missing out.  The taste and texture are nothing like what you buy in the market.  Both are much much better.  The freshness of the apple really pops and a touch of cinnamon makes every bite taste like home. 
This is a perfect use for last week's apples.  If you're buying apples particularly to make sauce though, Galas are recommended. 

What's In It:
12 c. thinly sliced apples (Peeled and cored is just understood, right?)
2 c. water
1/2 tsp. cinnamon
1 tbs. freshly squeezed lemon juice

How To Make It:
Mix apples and cinnamon and put in crockpot.
Add water and lemon juice and stir.
Set crock pot to it's fastest cooking setting (Mine is 4 hours)
Depending on how thinly you sliced the apple, the cooked applesauce may be somewhat chunky.  Some people like it that way.  If not, use potato masher to create desired consistency.
Cool, slightly, before serving.
Leftovers should be refrigerated.
Sauce is good hot and cold!
