Chocolate Chip Tea-for-Two Cookies

From now til Heart Day, we'll concentrate on romance...romantic food, that is.  I start with these simple yet delectable little puffs of buttery goodness.  What we have here is the magic simplicity of shortbread enhanced with just enough chocolate to push these cookies into decadent...and you can push one right into his waiting mouth and he'll ask for another, and then another...well, you get the idea.
Just for fun, and in the spirit of things, try adding a drop or two of red food coloring to the batter!

What's In It:


2 c. all-purpose, unbleached flour
2 sticks room temperature butter
1/2 c. confectioner's sugar, sifted
1 tsp. vanilla extract (No imitation!)
1 1/2 c. miniature semi-sweet chocolate chips

How To Make It:


Preheat oven to 350 degrees.
Line 2 cookie sheets with parchment paper.
Beat butter and sugar until fluffy.
Add vanilla, mix well.
Add flour gradually.  When well incorporated, stir in 1 c. chocolate chips.
Shape dough into 1" balls and place 2" apart on prepared cookie sheet.
Bake 10 - 12 minutes.
Cool on wire rack.
Meanwhile, put remaining chocolate chips in a zip-loc back and microwave in 10 second intervals, until melted.  (Usually takes about 30 seconds)  Cut off a tiny section in one corner of the bag in order to drizzled melted chocolate onto cookies.  Chill until chocolate is set.
