Spicy Pepper Pita





If you're reading this blog, chances are we have something in common.  I'm betting neither of us has adhered to a strictly healthy diet over the last couple of weeks.  Speaking for myself, it's probably been closer to a month.  For this reason, I'm devoting January to recipes that taste good while being good for you. 

This sandwich has been a staple in my diet for years.  It's simple to make, low in calories, and delicious!

What's In It:

Whole wheat pita, sliced open on one end
2 tbl. Roasted red pepper hummus (I like the consistency of Sabra.  It's smoother than some of the other brands.  Of course, you can substitute any flavor you like, but this is my favorite.)
1 slice reduced fat swiss cheese (I like Alpine Lace.  It's 25% leaner and packed with smooth swiss cheese flavor.)
2 slices cucumber (Especially this time of year, you'll want to buy organic if possible.  You could also buy pickling cucumbers if available.  Both will have more flavor than your basic hothouse cucumbers.)

How To Make It:

Spread hummus inside opened pita.  Slide cheese inside and top with cucumber slices.

This is sooo yummy!
